Quick and Easy Cherry Coconut Fluff Dessert Recipe

My husband and I were invited to a summer cookout and volleyball extravaganza. Like all good Midwesterners, we automatically knew that includes bringing food for the potluck portion of the party.

Unfortunately, earlier in the week due to a raging thunderstorm that took down power line followed by temperatures that shot up into the 90’s (F ) our electric company gave a huge chunk of the state the gift of multiday rolling blackouts early in the week. Fortunately, we got our electricity back in one of the first waves.

Even though we didn’t lose any of our food in the freezer (I had the freezer packed with big reusable ice packs similar to these to get them ready for the party) the power outages made grocery shopping for fresh party food ingredients difficult. I poked around my pantry and got a little creative. I made a quick and easy three ingredient cherry coconut fluff salad recipe that just so happens to also be dairy free so food allergy folks like myself won’t miss out.

Easy Three Ingredient Cherry Coconut Fluff Salad Recipe

You will need the following ingredients for this recipe:

6 to 9 ounces (one container) of coconut whip cream – you can buy a tub of So Delicious Coco Whip frozen topping hereor buy a can of Reddi-Whip Made with Coconut Milk Whipped Topping here. I have used both brands with equal taste and success.

1 can of cherry pie filling – you can get cherry pie filling here

1 package of vanilla or banana pudding mix (I find that the name brands like this kind are dairy free and most store brands have milk ingredients. Weird, huh?)

Optional: 1/2 cup of coconut flakes or chunks and/or mini marshmallows if you like. I didn’t have either ingredient in my pantry so am leaving them out today.

Step by Step How to Make this Summer Dessert Recipe

1. Combine and thoroughly mix together the container coconut whip cream and the can of cherry pie filling.

2. Add and mix the dry pudding powder into the cherry and coconut mixture.

Done and yum!

3. Add more coconut whip cream to the mixture if needed and the optional add ins if desired.

4. Thoroughly chill in the refrigerator before serving.

5. Eat! Enjoy! Repeat!
