The Best Pumpernickel Bread Machine Recipe!

When the weather starts to cool it is all the incentive I need to make my favorite comfort food dinner - 16 bean soup with homemade pumpernickel bread.

 It is also one of my favorite quick and easy dinner ideas to make when time is short because I use a dried 16 bean soup mix (you can find it here.  I suggest going with a mix that includes the seasoning) in the slow cooker and when paired with pumpernickel bread fresh from my bread machine it makes a filling meal just waiting for you when you get home from work, school, or busy fun activities. Quick and Easy Dairy Free Pumpernickel Bread Recipe

 


If you’re concerned about avoiding dairy due to a food allergy or intolerance then my dark pumpernickel bread recipe is definitely for you!

You will need the following ingredients for this recipe


¾ cup water

1 tablespoon vegetable or canola oil or your favorite neutral tasting cooking oil

1 teaspoon salt

2 tablespoons molasses – I think unsulfured molasses like this kind tastes best

1 tablespoon brown sugar Tip: to keep your brown sugar from absorbing moisture in an opened bag, store it in a sealed container (I repurposed a big empty jar) with a brown sugar saver like this one!

1 tablespoon and 1 teaspoon cocoa powder – If you need to keep your bread dairy free *raises hand* you can buy food allergy safe dairy free cocoa powder here

1 teaspoon of strong brewed coffee

2 teaspoons caraway seeds

¾ cup rye flour

¾ cup whole wheat flour

1 cup of white bread flour

2 teaspoons dry yeast

Step by Step How to Make this Recipe



1. Select the 1 pound loaf size on your bread machine (if applicable.) Add the ingredients in the order listed and according to the manufacturer’s directions. The reason most bread maker recipes fail is because you did not add the ingredients to the bread pan in the order that your machine requires. I learned this one the hard way when I had to replace my dead as a doornail bread machine with a new to me one.

2. Start the bread machine and wait until it is done!

Tip: Use the same measuring cup to measure the oil and then the molasses. Measure and pour the oil into the bread maker pan first. Do not rinse or wash out the measuring cup. Next, measure the molasses in the now lubricated cup for easier pouring.

Extra Tip: If you are at home while cooking both the soup in the Crockpot and the pumpernickel bread in the bread maker, around 3:00 in the afternoon you are going to start smelling some very good things coming out of your kitchen! This might make you very hungry. This might be a bad time to be working or hanging out at home.

Extra Extra Tip: Cooking dried beans in the crockpot all day makes them - oh how should I put this? - gasless.
