Quick and Easy Corned Beef Hash Recipe

I had some leftover corned beef in the refrigerator that was too much for one person to eat and a bit too little to reheat and serve by itself for dinner. I also had a few potatoes in the pantry that I needed to use and decided to get these two crazy kids together and made corned beef hash for dinner! Quick and Easy Whole Wheat Irish Soda Bread Recipe

Coffee and whole wheat toast are one of my breakfast mainstays. St. Patrick’s Day is coming up so why not whip up a loaf of Irish Soda Bread one of the greatest gifts this Lazy Budget Chef (who can’t proof bread to save her life) has ever known – the bread machine.

As luck would have it I have more whole wheat flour than white and more raisins than normal because I went to a bulk bin without a container and bought more raisin than I thought.

No problem. I’ll make a Irish style whole wheat bread featuring those those happy raisins sitting in my kitchen.

I am using the bread machine to make and proof the dough for this recipe and baking the bread in the oven because I want the round shape of a traditional Irish style bread.

You can bake it that way or you can bake the whole wheat Irish bread from start to finish in a bread machine. It will taste just the same although I personally think baking bread in the bread maker makes it a little more dense than when I bake bread machine dough in the oven. Do what is easiest for you.

My whole wheat Irish bread makes fantastic toast!

Dairy Free Whole Wheat Irish Bread - a Bread Machine Recipe

You will the these ingredients:

A bread machine like this one (also called a bread maker)

1 1/4 Cups of buttermilk OR non dairy buttermilk  (learn how to make buttermilk from regular milks on Lazy Budget Chef here)

2 Tablespoons of oil (use your favorite although I avoid olive oil because I think it tastes a little too heavy for this recipe)

3 Tablespoons of brown sugar

1 Tablespoon of caraway seeds

3/4 Teaspoon of salt

1 1/2 Cups of white bread flour

1 1/2 Cups of whole wheat flour

1 Teaspoon of bread machine yeast

2/3 Cup of raisins

Disclosure: I included affiliate links in this post for your convenience.

How to Make This Recipe:

1. Select the loaf size on your bread machine if applicable. This recipe will make a one and half pound loaf of yummy fantastic bread.

2. Add the the first seven ingredients (buttermilk, oil, brown sugar, caraway seeds, salts, flours, and yeast) to your bread machine baking pan in the order the manufacturer recommends for your brand of bread maker.

It does make a difference! I can’t tell you how many failures I had when I got my new bread machine because I loaded the ingredients in the same order as my old bread machine. Once I double checked the instruction manual and followed the recommended ingredient order for the new machine my bread came out perfectly.

Read your machine’s instructions. Don’t be that guy!

3. Add the raisins the bread maker to the bread maker per the manufacturer’s instructions. Some machines have a little hopper that dispenses it for you during the baking cycle. Other bread machines beep at the point you need to add dried fruit manually during the baking cycle.

4. Select the Dough option and start the bread machine.

5. Transfer the finished dough to a greased pie plate to keep the bread round while it is baking in the oven.

6. Bake the bread dough in a 375 degree (F ) oven for 30 minutes.

7. All the bread to cool, slice, eat, and repeat!

I am so intimidated by homemade bread, but it always looks worth the hassle. Thanks for sharing at Fiesta Friday!
Yummy! We make fresh bread once or twice a week and this recipe sounds great. I might add a sprinkling of cinnamon or mixed spice to go with the raisins too! Thanks for sharing at Fiesta Friday!

This looks delicious! After a trip to Ireland, I came back with a serious addiction to the bread - glad I can now make it here and it's easy!
