Smoked Salmon and Spinach Avocado Toast Recipe: A Quick and Easy Breakfast or Brunch Idea

 I made a loaf of rye bread (I make bread dough in a bread machine similar to this one and then bake the dough in the oven to make the homemade bread come out light and fluffy) after finally remembering to buy rye flour I went grocery shopping. (Disclosure: I am including affiliate links for your convenience.)

After a few morning meals of homemade rye bread toast with honey for breakfast, I wanted to kick things up a notch. A quick Aldi run inspired me to make one of my favorite quick, healthy, tastes fancy but is frugal (because Aldi’s low prices lets us eat fancy for cheap) breakfast recipes – smoked salmon and spinach avocado rye toast.

This is a great breakfast recipe if you are hosting a brunch, have house guests, or just want to treat yourself - which I highly recommended by the way.

Dairy Free Smoked Salmon and Avocado Rye Toast Breakfast or Bunch Recipe Idea

I make smoked salmon toast as a dairy free breakfast or brunch recipe to keep it dairy allergy friendly. If you want to add cheesy goodness – feel free!

You will need the following ingredients:

A slice(s) of your favorite type of bread. Today I am using rye bread because that’s what I have on hand.

Thin sliced smoked salmon, or lox, if you like. Just keep in mind that lox tastes slightly salter than smoked salmon and you may need to adjust the other ingredients to taste.

Fresh spinach leaves

Honey mustard – I am using German honey mustard which I think makes it taste much, much, better (you can buy the Offering Sweet German Honey Mustard I used here)

Dill – you can use either fresh dill if you have it or dried dill.

Avocado

Step by Step Instructions to Make this Recipe:

  1. Toast the bread.

  2. Spread the mustard on the toast.

  3. Add spinach leaves, sliced avocado, and smoked salmon to taste.

  4. Top with a quick kiss (or more or less) of dill.

  5. Eat. Enjoy. Repeat!

Here are some tips for making Salmon and Spinach Avocado Toast:

  • Use a good quality bread. A sturdy bread like French, sourdough, or rye bread will hold up well to the toppings. I have used all with great tasty success!

  • Don't overcrowd the toast with toppings. It's better to have a few thin slices of smoked salmon than a lot of thick slices.

  • If you don't have fresh dill, you can use dried dill. Just remember that dried herbs have a slightly more intense flavor than fresh herbs and adjust accordingly.

  • You can also add other toppings to this easy smoked salmon toast recipe such as cucumber, tomato, cream or cashew cheese to name a few.

  • Smoked salmon toast is also a great appetizer or light lunch idea. It's also perfect for brunch or a snack!
