Quick and Easy DIY Car Air Freshener Hack

I use a vent clip air freshener in my car keep the inside of my car from stinking up the joint in between cleanings. My personal go-to is t his Fabreeze car vent air freshener , but I also love the scent of these Yankee Candle car vent air fresheners . Depending on availability and sales, I tend to switch between the two.( Disclosure: I am including affiliate links for your convenience .) I stumbled upon a killer deal on Yankee Candle Sidekick refills. Without hesitation, I snatched them up, even though I didn't have the matching holder (the Sidekick air freshener looks like this ). My brilliant plan was to simply stick the refill in the car vent, similar to the air freshener sticks that look like this . It sorta worked but mostly didn’t. 

Instant Pot Meatless Meatball Soup Recipe

One of the few premade foods I buy are frozen meatballs because I never think far enough in advance from the time my brain says, “let’s have meatballs for dinner” to the “I need time to make meatballs and use them to  cook a dinner recipe.”

I have to carefully read the package before buying because some frozen meatballs have hidden dairy ingredients (usually it is in the breadcrumbs) or they change the ingredient list to something that includes dairy. The last time this happened I got frustrated after checking all of the meatballs in the frozen aisle, couldn’t find one I could eat, grabbed a bag of Italian meatless meatballs in desperation, and hoped they weren’t awful. I find plant based “meat” substitutes can be hit or miss in the taste department.

 

Turns out the Italian meatless meatballs I bought taste just as good as our usual turkey meatballs in spaghetti sauce. I used them in an appetizer I brought to a gathering so someone with a different food sensitivity to mine could enjoy them as well.  I put them into the regular rotation from time to time – especially when I want a quick and easy meatless meal that doesn’t skimp on taste.

Quick and Easy Instant Pot Meatball Soup Recipe

I’m using meatless meatballs and vegetable broth to meat free.

 

You will need the following ingredients:

 

1 Chopped medium onion

Olive Oil

2 Medium diced carrots

2 Diced ribs of celery

20 (ish) meatless meatballs – you can buy meatless meatballs here

6 Cups of vegetable broth – I can’t make a decent vegetable broth to save my life. I buy vegetable broth by the carton here

1 Bay leaf

1 Teaspoon of Cumin (or more to taste) – you can buy cumin here

2 Teaspoons of Oregano

1/2 Teaspoon salt

1/2 Teaspoon pepper

1 Tablespoon dried cilantro – you can buy dried cilantro here. If you don’t like cilantro, feel free to leave it out of the recipe.

1/2 Cup of dry pasta – you can use whatever type of pasta you like. Today I am using rigatoni.

Optional: 1/4 Cup of Spinach

Step by Step How to Make this Recipe:

 

1. Sauté the chopped onion in 2-3 tablespoons of olive oil (just enough to coat the bottom of the Instant Pot) until translucent.

 

2.  Add and stir to combine the rest of the ingredients into the Instant Pot. You don’t have to defrost the meatballs. You can chuck them in frozen and they will be perfectly cooked when the electric pressure cooker is done.

 

3. Put the lid on the Instant Pot and press the Soup button to cook the soup for 30 minutes at high pressure.

 

4. When the soup finishes cooking, quick vent the Instant Pot, serve and enjoy!
