One of our oldest and dearest best couple friends are moving out of state to start a new adventure. As I was running Saturday errands, I got a text that they sold their house.  I decided to throw them a dinner party to celebrate that evening.

“What? Are you nuts?!” you say. No, not this time because I had an ace up my sleeve. My secret fancy but easy dinner party weapon was already in an reusable insulated shopping bag in the trunk of my car – steak.

I don’t eat steak or, red meat for that matter, very often but when I do it is grilled.  Growing up on Ohio’s North Coast, it was common for dads to trudge outside to grill steaks in the winter snow because, “steaks were meant to be grilled.”

Fortunately, I do not have to worry about grilling in the snow or trying to keep it lit in the rain with this Hamilton Beach® Indoor Searing Grill. It is a real deal grill folks.  In fact, it looks just like a smaller version of the gigantic temperature controlled built in grill that came with my friend’s house (and that we all covet.) I’ve been using this grill at least once a week since I got it and it has grilled vegetables, chicken, turkey and veggie burgers, and now steak.

How to Grill the Perfect Steak


I used to have a hard time telling if the food I’m grilling is thoroughly cooked through without slicing into it while it is on the grill and hope it doesn’t fall through in the process. That’s why I recommend that you should always use a meat thermometer like this iGrill mini grilling thermometer from BBQGuys. This particular thermometer works with an app on your phone, which allows you to monitor the temperature of your steak when you close the lid or step away from the grill. It will even tell you when your steak is done!

You want to start with a room temperature steak. Today I am grilling top sirloin steak which is on the lean side, just the way we like it.

1. Start and preheat your grill. In this case, I set the temperature of the Searing Grill to Sear, which we will use to lock in the flavor before we actually start to cook the meat. The green Ready light will glow when the Searing Grill has reached the desired temperature.

2. Flavor both sides of your steak as desired. I am using Back of the Yards seasoning from The Spice Guys. It is fantastic garlic-pepper blend of spices that just sings when used as steak rub.

3. Put the steaks on the Searing Grill for a few minutes. If you want to make fancy grill marks you can put the steaks diagonally on the grill.

4. Turn the steak over, insert the iGrill probe into the steak, and set the temperature on the Searing Grill to 450 degrees F.

5. Open the iGrill app on your Android or IOS phone or tablet and select Start Grilling.

Select Food Temperature.

Select the cut of meat. In this case I am selecting Top Sirloin Steak.

Select how you want to want to cook your steak  In this case, I am selecting Medium.

Press Start.

The iGrill app will alert you when your steak has reached the correct temperature and is done!

6. Remove the steak from the grill and allow the meat to rest for 5 minutes. The beef needs to rest because it is still cooking after you remove it from the grill. Do not skip this step!


Will you just look at that perfectly juicy steak? So easy and so good!
