I was bopping along the Internet when I found myself in a discussion about frugal advice people hate. Basically, those tips to save money that don’t apply to you. And the number one way to save money that actually wasted money was – plant a garden. This was followed by people saying that vegetable gardens cost them more money than they saved because it cost them $40 to grow one tomato and that vegtable gardening is a waste of money. The Best Instant Pot Mashed Potato with Olive Oil Recipe

If make potatoes for dinner, 9 times out of ten it is a baked potato because let’s face it baked potatoes are quicker and easier to make than mashed potatoes.  Just pop the potatoes in a microwave oven potato bag like this one for 5 minutes and crisp the skins up in a toaster oven for a few minutes. Easy peasy.

And lazy.

But most importantly for me -  dairy free. The joys of a severe food intolerance I tell ya! *pout*
Fortunately through my beloved Instant Pot (there are other brands of electric pressure cookers too. You can learn about all of them here) and my in laws growing Yukon Gold potatoes in their vegetable garden introduced me to  the most  creamy, buttery, and velvety 10 minute mashed potatoes I have ever eaten and are completely diary and cholesterol free!

The secret to this recipe is using  Yukon Gold potatoes (learn more about them here) because they have a natural buttery taste. I swear the I must have asked my mother in law a dozen times when she added to the potatoes the first time they served them to us at dinner. She kept telling me all she did was boil the potatoes in water. She didn’t even add salt or pepper to them.

That. good.

Let’s do this!

You will need the following ingredients:

2 pounds of Yukon Gold potatoes

¼ cup  Olive oil

Smoked paprika – not that regular tasteless red stuff that pretends to be paprika but smoked paprika

1 Cup of water

Salt and Pepper to taste

Optional: Crushed Garlic – You can add crushed garlic to taste in Step 4 if Garlic Mashed Potatoes are your thing.

Step by Step How to Make This Recipe:

1. Peel and rinse the potatoes.

2. Add the water and peeled potatoes to the Instant Pot, lock the lid, and cook on Manual High Pressure for 10 minutes.

3. Drain the water from the fully cooked potatoes and transfer the potatoes into a mixing bowl.

4. Add the olive oil, salt, and pepper to the bowl and thoroughly mash the mixture and potatoes together with a potato masher.

5. Transfer the mashed potatoes to a serving bowl and garnish with the smoked paprika as desired.

The best potato side dish in the history of dinner!

6. Eat them up yum!
