Help Me Go Gluten Free

When I had to go lactose free, I did it kicking and screaming because some of my favorite foods have lactose and do not have a tasty lactose free equivalent. Hi cheese I am talking to you.

I immediately thought of my friend Krissy. She can’t eat gluten. I bet she went through a similar thing when she had to go gluten free.

This is only photo I have of Krissy and I. Please excuse these two happy but extremely sweaty women glistening in the 90 degree sun. We were waiting to step off in a parade last summer.

My lactose intolerance and her gluten intolerance makes it interesting when we’re trying to find a restaurant that serves food both of us can eat. The only thing that makes it easier for me is I can take an enzyme to help me digest lactose so I won’t feel too sluggish. Gluten free folks don’t have that option.


Being the good friend that I am (if I do say so myself), I’m always on the lookout for gluten free food and products for her and those of you who can’t eat gluten. I mean, what’s the point of being lucky enough to talk to brands if I can’t help my amazing readers?

Udi’s Gluten Free asked me to participate in their Gluten Free 14-Day Challenge. They sent me a starter box of Udi’s Gluten Free treats, lists of gluteus and gluten free foods, and some sample gluten free recipes to get me started.

  The brownie muffins didn’t last very long. They are chocolately, moist, and lactose free!  You might have already seen the photos in this post if you follow me @condoblues on Twitter or follow me @condoblues on Instagram.

I’m making the challenge a little harder because I have to do lactose free as well as gluten free. Luckily Udi’s has gluten and lactose free products too.

I’m 5 days into the challenge. Eating at home is easy so far since we cook with ingredient type food from scratch. I made my chivy egg salad recipe to eat on Udi’s Gluten free bread. We’re substituting brown rice or potatoes instead of whole wheat pasta for dinners.

The hardest part is finding gluten free food when I’m away from home. Husband and I spent last Saturday at our convention center. When we went to lunch, everything in the food court had either lactose or gluten. My choice was gave in and eat chicken nuggets or starve. I chose the not starving option. Bad gluten free me.

I'm gluten free and grain free, so I can't have most packaged gluten free goods. But brownie muffins sound awesome!! I try to bring food with me if I know I am going to be away from home .. or focus on real food options.. like chicken at a stir fry place. I do try to always have some snacks in my purse so I don't starve. Good luck!!! (nuts, dried fruit, etc)

Once you find a good all purpose gluten free flour mix you can bake anything that requires all purpose flour! Check out a couple of gluten free websites for flour mixtureas.
