Quick and Easy Whole Wheat Irish Soda Bread Recipe

Coffee and whole wheat toast are one of my breakfast mainstays. St. Patrick’s Day is coming up so why not whip up a loaf of Irish Soda Bread one of the greatest gifts this Lazy Budget Chef (who can’t proof bread to save her life) has ever known – the bread machine. As luck would have it I have more whole wheat flour than white and more raisins than normal because I went to a bulk bin without a container and bought more raisin than I thought. No problem. I’ll make a Irish style whole wheat bread featuring those those happy raisins sitting in my kitchen. I am using the bread machine to make and proof the dough for this recipe and baking the bread in the oven because I want the round shape of a traditional Irish style bread. You can bake it that way or you can bake the whole wheat Irish bread from start to finish in a bread machine. It will taste just the same although I personally think baking bread in the bread maker makes it a little more dense than when I bake bread machine do

Chocolate Coconut and Banana Smoothie Recipe

I am taking the Silk vs. Milk Challenge in which I replace my regular moo juice with Silk Soy, Coconut, or Almond Milk products. I’m feeling much better now that I’m off the moo so I guess my doctor was spot on about me being lactose intolerant.

I tried Silk Almond Milk in my Silk vs Milk Challenge - Day 1 post. I broke open a carton of Silk Coconut Milk and decided to make a smoothie with it.




Chocolate Coconut and Banana Smoothie

Ingredients
Chocolate milk powder or syrup
1 cup of coconut milk
1 banana

Make it.

  1. in a blender combine the coconut milk and a tablespoon (or more if you like it really chocolatly) of chocolate milk power of syrup.
  2. Slice the banana and add it to the bender.
  3. Blend it.
  4. Pour it in a glass and drink it up!

    Yum!! Definitely going to try this!
    We love banana smoothies...ours are probably a little less healthy but it is fairly easy to substitute ingredients to make them healthier (frozen bananas will make the shake thicker instead of ice cream, etc).

    Sounds good! How'd you like it, Lisa? I'm a soy milk user, but I have to admit it took me a few tries to make the switch. Now regular milk tastes funny.

    I make something similar to this that we call Banana Milk. Very tasty! You can also use a heaping tbsp. cocoa powder and some agave to replace the sugar-laden chocolate syrup. Add some crushed ice to the blender and it tastes just like a chocolate milkshake. Yum!
    Mary - The coconut milk tasted good but didn't have much of a coconutty taste. It's a good option for someone who doesn't like the tangy after taste of soy milk.

    Tammie - Husband bought a reduced sugar chocolate milk syrup at Trader Joe's because I'm still experimenting with the amounts in making my own chocolate milk mix.

    I make most of my smoothies with Silk Almond milk. It is my favorite way to go now. Not to mention it's expiration date is a little longer then regular milk, so I don't have to worry about it going bad.

    I made one of these this morning, but I put some ice in the blender as well! Made the drink nice and chilly, and PERFECT for a hot summers day!
    I also substituted chocolate syrup with chocolate protein powder for a little bit of a health kick!
