Best Ever Sweet Potato Waffle Recipe

I discovered a can of sweetened sweet potatoes after doing a cabinet shelf contents shuffle (to make sure I'm not accidently buying doubles or wasting food before it expires.) Kinda odd because we normally eat fresh sweet potatoes, well, just like regular potatoes - baked in the toaster oven and served with a dab of butter and salt. Yum! 

I probably bought them to make sweet potato pie or some other dessert type thing which I wasn't feeling at  the moment. As my empty stomach started to rumble at the time of day that is a little late for breakfast and a little early for lunch, the sweet potato recipe idea hit me - use the canned sweet potatoes to make sweet potato waffles for brunch!

I created my sweet potato waffle recipe with milk allergy and egg allergy friendly variations. I have a dairy allergy and I'd really like to eat the waffles I make. I have a friend with an egg allergy and it would be terribly rude to invite her over for a future brunch and feed her Danger Eggs. 

Which I suppose this means this is a vegan Belgian sweet potato waffle recipe too. Look at me, all recipe multitasking!

Easy and Allergy Friendly Sweet Potato Waffle Recipe


You will need the following ingredients:

1 and 3/4 cups of flour 

2 Teaspoons of baking powder 

1 Teaspoon of Kosher salt 

½ Teaspoon of pumpkin pie spice (or more or less to taste) - you can buy my absolute favorite, I will hoard during an apocalypse, Trader Joe's Pumpkin Spice here

1 and ¾ cups of milk OR your favorite plant based milk to make it milk allergy friendly

2 eggs OR an egg substitute like this one to make it egg allergy friendly

2 cups of drained canned sweet potatoes OR baked and peeled fresh sweet potatoes 


Note: My canned sweet potatoes were already sweetened so I did not add sugar to my recipe. If I were using unsweetened sweet potatoes I probably wouldn't add brown sugar or sweetener because we don't like our pancakes and waffles to be overly sweet before topping it with maple syrup. But, If you prefer your sweet potato recipes on the sweet side, you can add brown sugar to taste to the batter if you like.

Step by Step How to Make This Waffle Recipe:


1. Thoroughly mix together the dry ingredients: flour, Kosher salt, and pumpkin pie spice in a mixing bowl and set it aside.

2. Use a potato masher or fork to thoroughly mash the sweet potatoes in a separate bowl. 

3.  Add the eggs and milk to the mashed sweet potatoes and thoroughly mix them together. 

4. Combine and thoroughly mix the wet and dry ingredients together to make the waffle batter. 

5. Preheat your waffle maker if needed. Butter/oil your waffle iron as needed, pour the batter into the waffle maker, and allow the waffles to cook until the waffles are golden brown. (My Belgian waffle maker is similar to this one and has lights that indicate when the waffle maker is ready and when the waffles are fully cooked and ready to serve. 

6. Top with your favorite maple syrup, applesauce, or waffle topping and dig in!

You go multi-tasking supermom! My son has a milk allergy as well. He's not lactose intolerant which I'm sure is your issue as well. I've never actually eaten sweet potatoes.
