Quick and Easy Allergy Free Trail Mix Recipe

Trail mix is a fantastic portable - and if you skip the kind made with candy and chocolate - reasonably healthy snack. That is nearly impossible to find. It's not that I don't like chocolate (I do,) but can't eat a trail mix containing milk chocolate. If a store bought trail mix doesn't have milk ingredients, it usually has a surgery cereal or some other junk food type ingredient which makes it the nutritional equivalent to diving face first in a bowl of Jelly Bellies and not coming up for air until you've finished the entire thing. Not that I have any experience doing that, ahem. Basic mixed nuts would be a simple switch if only the folks I'd be around didn't have nut and peanut allergies. I think it is totally rude to send your friends into an anaphylactic reaction. A real jerk move. Best Ever Rice Pudding Recipe

Every time I went to a wedding as a little girl my grandpa would look at the rice on the ground after throwing it at the bride and groom, shake his head and say with pretend that sadness,’'All that rice pudding – wasted.”

Ironically, I never tried rice pudding as a kid because my grandmother never made it.

Or at least she didn’t make it for a family dinner. I would have definitely remembered it considering how many times I heard the rice pudding joke. It wasn’t until I was an adult and had a kitchen of my own that I tried rice pudding for the first time because I made it.  And then I made it again. and again. Each time tweaking the recipe to suit our taste until I came up with a winner!


I love to serve desserts in stemmed cocktail glasses. It is a quick and easy way to make a regular dessert look super fancy!


The Best Rice Pudding with Raisins Recipe You Will Ever Make!

I used golden raisins in this recipe (you can buy golden raisins here) but you can use regular raisins if you like. (Disclosure: I am including affiliate links in this post for your convenience.) The truth is I saw golden raisins in the store and was wondered what makes them different from regular raisins beside color. Turns out golden raisins are slightly sweeter than regular raisins. I couldn’t tell much of a difference after trying both types of raisins in separate bake and taste tests. Yes, this recipe comes to through many, many, taste tests – because I care. (And it is a delicious rice pudding recipe!)


In other words use whatever type of raisins you like. Today I am using golden raisins because it is the type of raisins I have on hand.

You will need the following ingredients for this recipe:


1 and 1/3 Cups of milk

2 Eggs

1 Teaspoon of vanilla extract – do your taste buds a favor and use real vanilla extract like this kind and skip the flavorless artificial vanilla extract – yuck!

4 Tablespoons of white sugar

1 Tablespoon of butter

1/8 of a Teaspoon of salt

1 Teaspoon of lemon juice

2 Cups of cooked rice – this is a fantastic recipe to use if you have leftover rice!

1/3 Cup of raisins

A bit of butter and flour to flour the baking pan or you can use this no mess baking pan spray if you like

A sprinkle of cinnamon


Step by Step How to Bake this Recipe:


1. Combine and thoroughly mix together the milk, eggs, vanilla extract, lemon juice, sugar, butter and salt in a mixing bowl.  Why? Because it is much easer to make sure the butter, sugar, and salt are 100% integrated and lump free in a smooth liquid mixture before we put the lumpy stuff in.


2. Add and stir to thoroughly combine the cooked rice into the mixture.


3. Add and stir to thoroughly combine the raisins into the mixture.


4. Grease and flour a square baking pan.


5. Pour the mixture into the baking pan and sprinkle a bit of cinnamon on top if desired.


6. Bake the rice pudding in a 325 degree oven (F ) until the pudding is set. This usually takes me about 50 minutes.


7. When the rice pudding cools – chow down!

My grandmother did make rice pudding and I love it, but sadly that sentiment is not shared by anyone else in my family. It's one of those things I make for myself when I am feeling sad.
