My husband and I were invited to a summer cookout and volleyball extravaganza. Like all good Midwesterners, we automatically knew that includes bringing food for the potluck portion of the party. Unfortunately, earlier in the week due to a raging thunderstorm that took down power line followed by temperatures that shot up into the 90’s (F ) our electric company gave a huge chunk of the state the gift of multiday rolling blackouts early in the week. Fortunately, we got our electricity back in one of the first waves. Pumpkin Overnight Oatmeal

Even though breakfast is the most important meal of the day, I'm not big on eating it.

That goes double on holidays. I use the business of the day as an excuse to make breakfast a fend for yourself with the exception of coffee kind of deal. I know I shouldn't do it especially on Thanksgiving since breakfast is usually the only meal we have time to eat before cooking all day or jumping in the car to go over the river and through the woods to Grandmother's house for dinner.





Breakfast casseroles don't usually work for me because they use milk. I think Chelsea's pumpkin overnight oatmeal recipe is the perfect compromise.
