Quick and Easy Corned Beef Hash Recipe

I had some leftover corned beef in the refrigerator that was too much for one person to eat and a bit too little to reheat and serve by itself for dinner. This was Supposed to be a Post About Cedar Point but it's Not.

Growing up on Ohio's North Coast, every summer we went to America's number one rated roller coaster park, Cedar Point at least once. I love the park. I can navigate it with my eyes shut AND still tell you where every restroom and first aid station is in the park because I worked there too.

Needless to say, I love, love, love, love, LOVE roller coasters! I was stoked when Husband told me his company chose Cedar Point for their company picnic last weekend. I finally get to ride Gatekeeper! Yay!

Nope.

I rode a bus all the way to Cedar Point and back and all I got was a pulled pork sandwich.

It was a good sandwich but it doesn't compare to everything we had planned for the day.

While we rode a bus to Cedar Point closed the park last Saturday.

WHAT?! The season just started. Saturdays are amusement parks biggest day. Cedar Point expected an even bigger crowd because it was Bike Week. Not to mention all of the groups like ours that reserved packages that day. 

They only way we found out about a water main break closing Cedar Point was from a text I got in transit from a season pass holder we were going to meet at the park. We were halfway there and hoped they might have it repaired by the time we got there.

The only ride we experienced was the Traffic Snarl of Disappointed Patrons.

We had a real life National Lampoon's Vacation moment.

The city water main to Cedar Point broke and the whole peninsula was without water for two days. I wouldn't want to be the person who had to tell Cedar Point they wouldn't have water on their biggest day of the week. Health codes won't let you have food service without water. Health codes prevent you from opening without restrooms either. Nothing coming out of the tap it difficult open the water rides too.

Big thanks to Sandusky's finest for unsnarling traffic. On the upside, the small and family owned attractions in the area had record days.

It happens. If I were a 54 year old water main that just went through one of the harshest winters around, I'd want a break too. Although I'm disappointed Cedar Point Group Sales didn't contact the women who set up our trip and tell us not to come. She felt horrible. She felt like she let everyone down.

Fortunately a pep talk and some pizza later, she felt better. Although I wish Group Sales set up a series of robocalls to tell us about the situation since they knew we were coming. Then the company wouldn't have wasted money on a bus rental to nowhere.

Fortunately, we live close enough to Cedar Point that the company can and will reschedule our trip. I feel worse for the folks who had to leave the on property hotels when Cedar Point closed them during the emergency. Can you imagine planning your vacation months in advance and finding out you can't stay there?
