Quick and Easy Corned Beef Hash Recipe

I had some leftover corned beef in the refrigerator that was too much for one person to eat and a bit too little to reheat and serve by itself for dinner. I also had a few potatoes in the pantry that I needed to use and decided to get these two crazy kids together and made corned beef hash for dinner! A Lactose Free Chip with #GiantFlavor

When I was finally convinced I should give up lactose based foods, I wasn't prepared for just how many items contain milk, milk solids, whey, or lactic acid. The most surprising?

Flavored chips.

Of course the cheesy flavored chips are no brainer, but some of the so called plain flavors containing milk ingredients is surprising. It makes our small field of allowable trans-fat, hydrogenated oil, high fructose corn syrup free salty snacks even smaller.

Yes, yes I know. I should give up chips entirely but sometimes a treat during Movie Night makes a good movie even better. 80/20 Rule, remember?

Sorry gang. No fancy dip recipes this time. I snarfed these bad boys straight from the bag.

Out of foodie curiosity, we took the opportunity to try two new flavors of Green Giant Veggie Snack Chips. Husband concentrated on the Garden Ranch Roasted Veggie Tortilla Chips because it contains milk ingredients.

To be clear, Green Giant Veggie Snacks are either a corn or potato chip flavored with vegetables. They are meant to be eaten as a snack, not as a replacement for vegetables as my vegetable phobic nephews Mr. 2 of 9 and Mr. 4 of 9 hoped. Sorry guys, they are a treat not a replacement  – at least in my house.

It is nice to have a lactose free flavored chip option in Barbecue Sweet Potato. I can taste the sweet potato flavor although I’m not sure if it is part of the flavoring or if it is the chip itself. I suspect the sweet potato it is in the flavoring, which is a little disappointing because I like plain sweet potato chips and hoped this would be the best of both worlds.

Husband thought the barbecue spices were a little too heavy but I thought they were just right. Of course being who we are, I though the Garden Ranch had too much flavoring and Husband thought they were just right. I guess it comes down to how much flavoring you like on your snack chips.

Green Giant Veggie Snacks made the Allowable list although we will most likely save them for parties and family gatherings like we try to do with most of that type of stuff. As always, your mileage may vary.

What do you look for in a snack chip or do you skip them entirely?
