Quick and Easy Corned Beef Hash Recipe

I had some leftover corned beef in the refrigerator that was too much for one person to eat and a bit too little to reheat and serve by itself for dinner. Grandma's Hamburger Pie Recipe

As an adventurous foodie, you might think I grew up with homemade gourmet meals.

Nope.

Most of my childhood meals were made with ingredients from a box or a can. My mom's favorite spices are salt and pepper while my spice rack is as big as my pantry door is long.  Mom makes basic food like her mother's hamburger pie. That's not a bad thing. It is a different than I cook now thing.




I found Grandma's recipe as I flipped through the family recipes in my recipe box . Pi Day is coming up and Husband was curious about Hamburger Pie. He suggested we have it for dinner on Pi Day.  I rarely make Grandma's recipe because it is one of those old skool recipes full of too much salt, cholesterol, and bad fat.  Not to mention the original recipe it is full of lactose which I can't eat.

I experimented and healthy-ed up my grandmother's Hamburger Pie recipe a bit for Pi Day.

Here is Grandma’s original recipe:

Grandmas' Hamburger Pie Recipe


½ cup cream
1 cup + 2 Tablespoons of Bisquick
1 lb of ground beef
2 medium onions, chopped
1 teaspoon salt
½ teaspoon pepper
2 eggs, beaten
1 cup small curd cottage cheese
Paprika

My grandmother’s original hamburger pie recipe is yummy but it could use a little help to make it a little less of a cholesterol bomb and a little kick of flavor in the paprika department because in the original recipe the regular paprika is more for color than taste. I just can’t leave well enough alone I guess.

Lightened Up Hamburger Pie Recipe


Ingredients

½ cup skim milk (or your favorite lactose free milk or plain kefir)
Pie crust mix of  substitute a mix of one cup of flour, 1½ teaspoons of baking powder, ½ teaspoon of salt, and 1 Tablespoon of melted butter. (True confessions time. I used Bisquick because I can't make a decent pie crust to save my life.)
1 lb of ground turkey
1 medium onion, chopped
1 teaspoon salt
½ teaspoon pepper
1 cup light cottage cheese (or Lactade lactose free cottage cheese)
Smoked paprika (I think regular paprika is too bland. I use smoked paprika because it has a bit more flavor)

Make the crust

1. Stir the skim milk to the biscuit mix with a fork.
2. Grandma said to knead the dough 10 times so that’s what I do.
3. Roll the dough into a circle.
4. Place the dough in a pie pan.
5. Press the edges with a fork so it looks fancy.

Tip: Dip your fork in water so the dough doesn't stick to the fork.

Make the filling

1. Brown the ground turkey, onions, salt and pepper together.
2. In a separate bowl, mix the eggs and cottage cheese together.
3. Drain any fat from the turkey mixture.
4. Pour the turkey mixture into the pie shell.



5. Pour the cottage cheese and egg mixture over the meat mixture.
6. Sprinkle with the smoked paprika.
7. Bake for 30 minutes at 375 degrees.
  
The family gave my lighter version a big thumbs up because the smoked paprika adds taste as well as color.

I would have never thought to make a hamburger pie. This looks a lot better than a chicken pot pie.
