Quick and Easy Corned Beef Hash Recipe

The I’m Sick Grocery Shopping Trip

I keep a running shopping list of items I update when we run out. (I use the Cozi organizer app because I can access and update it from my computer, iPad, and Android phone and it’s FREE!)

My grocery list was large enough to warrant a grocery-shopping trip instead of just a juice run. I’m still sick with a kidney infection and drinking a bottle of cranberry juice a day.

 I was (am) sore, and tired, and didn’t feel like shopping. Originally, I planned to buy everything at Meijer. For the last month, I feel like someone repeatedly kicked me in the kidneys and the back of my scalp is on fire (hence the dandruff shampoo. The natural tea tree oil shampoo my hairdresser recommended made the problem worse. Ow!)

 
I played around with the Intragram filters for this post. 



 I spent $37.99 at Meijer for the month. I saved $20.52 total ($13.12 in non-coupon savings and $7.40 in coupon savings.) I'll cut and use the roast turkey in recipes as I would chicken breast. The canned beans are backups for when I don't have time to make dried beans on the fly.

Yes, Husband drinks that much milk. We go through a gallon a week.

The popcorn is my snack crack of choice. The bags don't go on sale or offer coupons often, in this case they did so I snatched them up even though I have 1/4 a bag of kernels in the pantry. I luvs me some poooooooopcorrrrrrrrrrrrrn!

We still have some fresh produce left from our last shopping trip. We also have frozen veggies as a backup. What I like about using frozen vegetables is I can open a bag and pull out a handful for a stir fry, and keep the rest of the bag in the freezer until I need it. With canned vegetables it's use it all or nothing.

As I was standing in the juice aisle, I did a quick check of the Meijer 100% cranberry juice sale and saw I could get 100% juice cheaper at Aldi. Since I was already there to buy juice, I figured I might as well pick up the rest of the items on my February grocery shopping list.

I spent $51.72 at Aldi.

Doesn't it make my groceriy photos look all arty and moody? Yeah, I don't think so either.

I’m taking the easy way out with lunches (when I feel like eating them) with salads topped with spiced tuna. I’ll risk anything the tuna may bring because I didn't check if this brand could be high in mercury and whatnot.  I’m sick and want easy. Good thing I bought that bottle of multi-vitamins! :)

The oatmeal and dried cranberries are for breakfast either as oatmeal or to bake into granola. Truthfully, I haven't felt like eating breakfast either. Husband's been going with the hippie colon blow cereal I bought last month. That's the benefit of stockpiling sale items. It cuts my shopping time and needs in time like this when I'm sick and rather be home on the sofa.

I have ground turkey and chicken for easy burger or meatloaf or I can brown it and add it to tomato sauce/diced tomato for pasta sauce.

So sorry you're still feeling yucky. Baked potatoes are our go-to food for when we don't want to/don't have time to cook. They're very versatile, can be dressed up or enjoyed plain, eaten alone or with sides (easy-salad), and in a pinch, I can substitute a sweet potato for me while my SO sticks with Irish. And they can be cooked in the microwave in less than 10 minutes while I wander around doing something else :)
