Quick and Easy Corned Beef Hash Recipe

I had some leftover corned beef in the refrigerator that was too much for one person to eat and a bit too little to reheat and serve by itself for dinner. I also had a few potatoes in the pantry that I needed to use and decided to get these two crazy kids together and made corned beef hash for dinner! 19 Fancy but Easy Jam Recipes

Now that I am not afraid of canning (or as afraid of canning as I used to be), I found I really like making jam. I especially like making recipes that have something like an unexpected spice mixed in with the fruit and sugar.

Hey, I figure if If I am going to go to the trouble of making jam instead of buying it, then it better be something special or different than a basic fruit and sugar recipe I can buy at the grocery store or farm market.

I'm collecting interesting jam recipes on my Pinterest boards (give me a follow, pretty please?) and making my favorites. I figure it is only neighborly to share. The recipes. I can’t share the jam because many of these recipes are small batches, make 1 jar (perfect if you don’t want to can it!), or are for freezer jam.
These recipes look and taste all fancy pants gourmet but they are super simple to make.  I like having extra homemade jam on hand so I can help Santa out in the gift and stocking stuffer area on Christmas day. We’re tight like that.

Let’s jam!

Alton Brown’s Spiced Blueberry Jammin’ is the first jam and canning recipe I tried on my own. I get raves and requests to make it because the nutmeg in it makes it irresistible.

Coleen’s Recipes Apple Pie Jam is on my short list to try just as soon as I get my hands on some of  this year’s very plentiful apple crop. I think it will be fantastic over pancakes! Update: I made this jam last fall. It really tastes like apple pie. I haven't tried it over pancakes yet. It makes a most excellent sundae topping on ice cream though.

Mommy’s Kitchen Crockpot Apple Butter This year’s crop is bursting with apples! Why not try making a spicy apple butter?

The Humble Kitchen Peach and Blackberry Jam Spiced with Cardamom because everything tastes better with cardamom. Everything.

Bearnadin Strawberry Rhubarb Jam. I made this recipe earlier this summer and it is so good we have eaten almost all it already.

Oh She Glows Magical Blueberry Vanilla Chia Seed Jam. If you don’t want tons of sugar or pectin in your jam, this one is for you although I’m not sure you can can it. She uses Chia seeds to thicken the jam.  Interesting!

Food Renegade Cranberry Jam She calls it Cranberry Super Foods Spread because this jam is full of antioxidants. I can’t wait for cranberry season to give this one a go. Update: I made this jam last November. It was a welcome Christmas gift for my jam loving family.

Cranberry Pineapple Jam Cranberry season better come soon. I want to make more of  this one too! Update: I also made this jam last November. The sweet pineapple nicely offsets and compliments the tart cranberries.

Old World Garden Farms - Strawberry Honey Jam Recipe has four natural ingredients and no sugar or pectin. Also, honey. Did I mention the honey? Yes, honey.

Claiming Our Space – Blueberry Strawberry Jam I never met a strawberry or blueberry I didn’t like so of course I want to get these two crazy kids together.

My Strawberry Peach Jam is an interesting mix of two summer fruits.

Romston Blueberry and Grand-Marnier Jam Recipe Sweet blueberries and Grand-Marnier tastes amazing.

America’s Test Kitchen How to Make Wine Jelly Finally a good use for a cheap bottle of wine!

Ball’s Pina Colada Jam  You can have the option of either using rum or coconut water in this recipe. Gee, too bad I drank the last of the coconut water and have a half bottle of rum in the pantry… Update: I made this recipe last year during pineapple season. The alcohol cooks out of the jam during both the jam making and canning processes. Make sure you use a quality rum that leaves a good flavor behind after the alcohol cooks out of the jam.

Homemade Pectin Recipe

Did you know you can make pectin from apple peels and cores? Yes you can! I tried Canning Granny’s Making and Canning Pectin from Apples recipe last year and used to make this summer’s strawberry rhubarb jam. It worked!

Hi...love all your choices of jam recipes...tip: I always buy an extra two bags of cranberries in season and throw them in the freezer. Great addition to pancakes, coffeecake, sauces to brighten up winter meals. I also use them in oatmeal muffins with orange juice and zest ---super nummy! I'm still waiting for the last of my rhubarb to make some jam...thanks for reminding me! From Friday Favorites, Sandi
